Does DBA 3.0 treat them any different whether they are mounted or on foot? And for display purposes one should distinguish them by amount of armor? Thinking late 1300 to early 1400 medieval French and English. Thank you.

If mounted Men at Arms count as Knights. It could argued for historial games that some of the Router types that served on both side of the Hundred Years War could be classed as Fast Knights to reflect less armor (esp barding) and more mobile "raider" mentality (that is not offical).
When dismounted they count as Blades. Armor makes no difference in DBA (other than Fast versions). As a home rule: Heavy Armor grants a +1 if Doubled by an opponent in Ranged or Close Combat.

You will find there are exciting initiatives in store in campaigns, historical scenarios, and house rules to better reflect certain battles or campaigns. In addition, a ton of work and thought has also gone into really noodling out what the optimal practice is for playing and getting the most out of the game.
You will find the game plays cleanly, not as fast as some people claim, but that there often a great many options that are all somewhat viable, and on any given move you have to really work to nail down what the best move is.
Small subtleties, like allowing the bounding player to choose the order of resolving combats is a nice, elegant way to simulate initiative, and attack/counterattack. You will see great examples of this in Warband vs Blade battles, like Gauls against Caesar. My advice to new players is this: think carefully about combat resolution ordering. It has far-reaching impacts... Timing is everything in this game.
