Does anyone know how these would have looked as far as shield designs are concerned? Did they keep their own colours or adopt the black on white cross for their shields? I think they kept their own colours on barding/surcoats etc.

Simon, I think they kept their own heraldry but may have often added black crosses on white as badges or incorporated into their heraldary. Mine use the same figures as I use for Medieval Germans with a mix of Teutonic German and a sprinkling of Polish herald art.

A book in German: "Der Deutschorden von akkon zum Baltikum, Die Armee 1198-1420" by Rolf Fuhrmann - No. 6 in the Heere and Waffen series shows an assortment of heraldry for these knights. Although this book is entirely in German it's well enough illustrated to be worth getting if you're interested in the subject. Insofar as I have seen crusader knights kept their own colors and arms.
Hadn't seen anything about adding (as per the Crusades in the Holylands) a black cross on white badge on their shield, surcoat, or harness.
