Very hard for the mongols when there enemy's can deploy across most of the board tried them last night vs Teutonic on 30" board and collision coarse rules there mobility was much more decisive destroyed one Lh two Kn and a Kn gen for the loss three own Lh before teutonics got there third column on the board much more mongol like try them again soon in case it was a fluke.

So, I recently got a copy of the DBA 3.0 rules. ...for the IV/35 Mongol Conquest list...which of their many enemies would make for the most interesting games? First of all, welcome to DBA-3. As for most interesting opponent for the Mongols, my first reaction would be to suggest the III/56 Khitan-Liao. All those Khitan Knights could make for some exciting games. As others have noted, don't expect the Mongols to be world-beaters. LH armies take real skill...something I haven't mastered yet --but I keep trying! In our local group's COMPENDIVM of all DBA results (since 2002!), IV/35 Mongols have an inauspicious, 72-91 record. The lone army they have a winning record is the III/44 Tribal Mongolians, against whom they are 13-11. (Worst record is against III/79 Early Russian, 1-7.)

It seems you have extensive match-up records for DBA 3.0. Are they published anywhere? I would be very interested in having a look at them.

I would suggest that in addition to the Khitan Liao (which may not be actual enemies of the Mongol Conquest) that the Hsi Hsia are a fun mix of troop types that will challenge the Mongols without being an over the top opponent.
You have a core of Cv, one element of Kn, some LH, and then for foot you have 2x4Bd, 2x4Ax and 2x4Cb - with Hd or Art available as well

Quite a difficult opponent for the Mongols is the III/62b Sung Chinese list...with lots of Cb and artillery, plus Hd to block with which don't count towards wins, it would be difficult but not impossible to beat.
Interesting opponents would be:
IV/36 Late Muslim Indian with 3x3Cav(Gen),2x2LH,1xEl,1x3Bd,3x3Bw,1x7Hd or 2Ps Aggression 2...it offers a ballanced game.
IV/44a Post Mongol Russian with 10x3Cav(Gen),[1xSp+1x4Bw] or 2xWWg.Aggression 1...The Russians have mor Cav and possibly the WWg which are only vulnerable to the Mongol Art. and fighting in Forrest terrain may not be all that helpful.
and IV/48 Yuan Chinese... If valid as it is shown as an enemy of IV/35, but IV/35 is not shown as an enemy of IV/48? 3x3Cav(Gen).,3x3Cav or 2Lh,1x3Bd or 2xPs,1x4Bd,2x4Cb,1x3/4/8Bw or 2Ps,1xArt or Lh... Aggression 2 with a Half Mounted and Half foot line up the Yuan could give some interesting games for the Mongols.
Knights in 3.0 are not as powerful as in earlier versions of the rules.... the line them up and charge to glory doesn't always work... even the Normans at Hastings learned to "soften up" the enemy battle line before charging home.. maybe the tale of the repeated charges being repulsed was invention to make the victory sound better than boring skirmishing as there would have been a shortage of fresh horses to carry the successful charge if the attacks had been mounted for several hours... unless the final assault was on foot?
Lh are as stated difficult to play and do take time to learn to play well.
